- Elephant Hills elegant Hawke’s Bay Cuvée The 2014 Le Phant is a full-bodied Hawke’s Bay red wine blend of Merlot (61%), Syrah (26%) and Cabernet Sauvignon. The grapes come from the three sustainably managed vineyards Gimblett, Te Awanga and Triangle. The harvest is done by hand. After careful destemming, the approximately 14-day fermentation takes place in open fermentation stands. After a biological acid degradation in small oak barrels, the wine matures there for another 12 months. And this is how Le Phant rouge by Elephant Hill tastes The Le Phant rouge by Elephant Hill seduces with an intense blackberry and plum scent, accompanied by smoke and spices, especially wonderful peppery notes that come from Syrah. On the palate, the wine is very juicy and full-bodied, with fine texture and matured tannin. A very opulent, harmonious wine, elegant, with a lot of ripe fruit and long reverberation.
