- Besoain Estate Cabernet Sauvignon – The flagship wine from Besoain Wines The Besoain Estate Cabernet Sauvignon consists of 85 per cent Cabernet Sauvignon and 15 per cent Carménère and Petit Verdot. The manual harvest took place in the first week of April. Around 6,500 kg per hectare were harvested. After the harvest, the grapes were selected by hand in the vineyard and then in the wine cellar. Before fermentation, the grapes were cold macerated for 7 days to extract colour and tannin. Alcoholic fermentation took place in small stainless steel tanks. Malolactic fermentation then took place in French barriques. Each grape variety was vinified separately in its own barrels. The final blending took place a few days before bottling. The wines were neither clarified nor filtered. The wine matured for a total of 18 months in French oak barriques and then a further year in the bottle before being released onto the market. The climate in the Maipo and Andes region is mildly Mediterranean with an increase in rainfall the further south you go. However, the longitudinal valleys along the Andes and the coastal mountain range, the “Cordillera de la Costa”, have very special wine-growing conditions. To take this into account, the designations “Andes”, “Between the Cordilleras” and “Coast” have been introduced here. The microclimate in these zones is very different. This applies not only to the amount of rainfall and humidity, but especially to the temperature fluctuations of up to 15 °C in summer. On the palate, this Chilean red wine is opulent and full-bodied, wonderfully juicy and concentrated, with plenty of fruit extract. The tannins are ripe and silky smooth, the acidity is well supported. A noble, varietal Cabernet Sauvignon from Chile, powerful, elegant and very balanced. The finish is long with a grandiose, fruity and spicy aftertaste.
