- Matured Pinot Noir of format The 11-hectare Hope Vineyard is organically farmed and certified with BioGro NZ. These wines express with integrity the character of a single vineyard, a variety and a vintage. The grapes were harvested by hand in small plots after cloning as soon as they reached the optimal degree of ripeness. They were 100 percent destemmed and soaked cool for 6 – 11 days. The fermentation took place completely spontaneously with maximum temperatures between 26 and 30 degrees Celsius. The total skin contact was between 19 and 27 days. The expansion then took place for 12 months in a mix of new (31 percent) and used, French oak barriiques with a capacity of 228 liters. There the wine also underwent a biological acid degradation (malolactic fermentation). The red wine was blended parcel by parcel before bottling and only coarsely filtered. And this is how the Hope Vineyard Pinot Noir tastes The Greenhough Hope Vinyard Pinot Noir animates with a delicate scent of ripe cherries, raspberries and blackberries, accompanied by attractive tea and spice notes, hints of tobacco leaves, liquorice and subtle floral tones. On the palate peppery-spicy fruit, with silky tannin and well-supporting, juicy acidity, an extremely soft and harmonious red wine, elegant and with a lasting, fruity-floral aftertaste.
