- Mystae – from New Zealand’s top league The “Mystae” were ancient Greek philosophers who sought a deeper understanding of the mysteries of the universe and paid homage to the Greek god of wine, Dionysus. The great wine shines with a perfect balance between the power of Cabernet and the fruit facets of Merlot and the other three Bordeaux grape varieties. The 2015 vintage has the following grape variety mix: 48% Cabernet Sauvignon, 30% Merlot, 11% Cabernet Franc, 7% Malbec and 4% Petit Verdot. The ageing of the wine took 10 months and took place 60% in French oak and 40% in American oak. The proportion of new barrique barrels was 40%. Before bottling, the wine was minimally filtered. Destiny Bay swears by the use of natural cork in all its wines, including the Mystae, which has a storage potential of over 15 years. The wine, according to renowned wine critics, is one of the best wines in New Zealand. It beguiles with its dominant Cabernet aroma profile, blackberries, cassis and cranberries, accompanied by subtle roasted notes, chocolate, tobacco, liquorice and fresh bread crust. Hints of pepper and slightly earthy-leathery tones. On the palate dense and full-bodied, with present, supple tannin the finest fruit extract, shows skilful wood use and very good balance, a complex, elegant and characterful wine with a remarkably long finish and good maturation potential.
